Lentil Lettuce Cups

Time: 25 minutes
Serves: 4-6
Ingredients:
- 3 cups red lentils
- 1 red chilli, sliced
- 2 garlic cloves, chopped
- ½ red onion, diced
- Juice of 1 lime
- 1 tbsp honey
- 1 tbsp light soy sauce
- 1 tsp fish sauce
- 2 tbsp chilli sauce
- Extra virgin olive oil
- Lettuce cups
- Vietnamese mint or Thai basil, to serve
Method:
Prepare the lentils by boiling in water for 10-15 minutes. Drained and set aside.
In a bowl, combine the lime juice, fish sauce, honey, light soy and chilli sauce.
In a pan heat olive oil. Add onion and garlic and brown for 2-3 minutes. Add chilli and combine until fragrant.
Add the lentils and stir through the sauce you have set aside. Combine well and gently cook for 5 minutes.
To serve, spoon the lentils mixture into lettuce cups, top with fresh herbs and enjoy!
