Lentil and Grilled Cheese Sandwich

Time: 20 minutes
Serves: 2
Ingredients:
- 1 cup red lentils already cooked/boiled for 16-18 minutes until soft – NOT mushy
- 2 tsp seeded mustard
- 2 tbsp sauerkraut – from a jar
- 2 pieces bread – wholegrain/wholemeal
- 2 slices swiss cheese
Method:
In a bowl combine the lentils with mustard and a pinch of salt and pepper.
With a fork combine and mash slightly so a rough paste forms.
Grab the two pieces of bread and spread the lentil mixture over both, place sauerkraut on top of one and then a slice of cheese.
Place in a grill toaster for 5-6 minutes or until the cheese melts.
