Black Eye Beans
Blackeye Beans (or blackeyed peas) are a small, white, kidney-shaped bean with a single black spot giving it its characteristic name. It has a thinner skin than most other beans, meaning that it cooks quickly without any extra soaking. These creamy beans got their name from their characteristic appearance. They swell when they are cooked and rich in fibre and protein.

COOKING INSTRUCTIONS
- Place the black eye beans in a large bowl and add enough water to cover by at least 4 inches.
- Let them soak overnight.
- While not entirely necessary, soaking your beans will cut down on cooking time, making the whole process quicker and easier.
- Drain and rise the beans and can be used for further preparation.
